Basic Banana Bread

BENEFIT

This tasty bread has no added sugar, all of the sweetness is naturally occurring. One slice is also a source of fibre so it makes a great healthy snack to help boost your toddler’s fibre intake.

Ingredients

  • 75g plain flour
  • 50g wholemeal flour
  • 1 tsp baking powder
  • 1 heaped tsp cinnamon
  • 50ml rapeseed oil
  • 1 tsp vanilla
  • 1 egg
  • 1 tbsp milk
  • 3 bananas, mashed

Directions

  1. Preheat the oven to 180C or 160C for a fan oven.
  2. Line a small loaf tin with greaseproof paper/baking parchment.
  3. In a bowl, combine the flour, baking powder and cinnamon and mix together.
  4. In a separate bowl, mix the oil, vanilla essence, egg, milk and mashed banana and whisk together.
  5. Pour the wet mixture into the bowl of dry ingredients and combine thoroughly.
  6. Pour the final mixture into the baking tin and bake for about 30-40 minutes until risen and golden brown on top. A skewer inserted into the middle will come out clean when it is fully cooked.
  7. Remove from tin and allow to cool on wire rack for about 10 minutes.

TIP

You could add the banana mixture into bun cases instead of a loaf tin to make healthy banana buns.
