Veggie Burgers

BENEFIT

Ingredients

  • 1 Handful spinach leaves (or a handful of frozen peas)
  • 1 potato (small, peeled and chopped)
  • 1 carrot (washed, peeled and chopped)
  • 1 parsnip (washed, peeled, chopped)
  • 1 tbsp rapeseed oil (or olive oil)
  • 1 tbsp wholemeal flour

Directions

  1. Boil or steam the vegetables until soft, adding the spinach (or peas) in for the last few minutes. Drain and mash.
  2. Combine the mashed vegetables with the flour and olive oil and mix well.
  3. Leave to stand and cool completely.
  4. Mould into 4 small patties.
  5. Place on a greased tray and bake in a preheated oven at 200°C for 10-15 minutes.
