BENEFIT

This lunch box incorporates foods from every shelf of the toddler food pyramid to give your toddler a balanced lunch. It is high in calcium for healthy bones and protein for healthy muscles.

Ingredients

  • 1 slice wholegrain bread
  • 1 hardboiled egg
  • 2 tsp mayonnaise
  • ½ spring onion (chopped finely)
  • Handful of grapes (seedless, halved)
  • 30g cheddar cheese (chopped in clubes)

Directions

  1. Mash the hard-boiled egg together with the mayonnaise.
  2. Mix through the spring onion.
  3. Cut the bread in half, spread the mixture on one half and top with the other piece of bread.
  4. Chop into triangles or fingers.
  5. Serve with the cheese and grapes.

You can swap the sandwich fillings every day for variety - try tuna and sweetcorn, sliced turkey and cheese or avocado and tomato. To keep things interesting also vary between tortilla wraps, pitta breads or bagels.
