Chilli con carne with courgette 'pasta'

Ingredients

  • 120g lean mince meat
  • 1 onion
  • 1 carrot
  • 250g chopped tomatoes (tinned)
  • 250g kidney beans
  • 1 clove garlic
  • 1 tsp mild chilli powder
  • 100ml stock (reduced salt)
  • 100g tomato puree
  • Parsley (chopped)
  • 1 courgette
  • 1 tsp rapeseed oil
  • 1 lemon (zest of)
  • 1 tbsp chopped basil
  • Black pepper

Directions

For the Chilli con carne:

  1. Add diced onion, carrot, tomato puree, chilli powder and garlic to a pan on a low heat for 10 minutes.
  2. Add the mince to the pan and brown for 4-5 minutes.
  3. Add in the kidney beans, tomatoes and stock and simmer for 20-30 minutes.

For the courgette pasta:

  1. While the chilli is simmering, scrub the courgette. Remove the ends and *julienne by hand or with a mandolin or potato peeler (Discard seeds).
  2. Add the courgette to a frying pan with the oil and allow to cook gently over a medium heat.
  3. Add in the lemon peel, fresh basil and pepper and toss to combine.  Serve immediately.

*Cut into long thin stripes

TIP

Make the chilli con carne in bulk and freeze in containers. Just prepare the courgette pasta from fresh when needed or alternatively, serve with rice.
