Chicken & cherry tomato pesto pasta

BENEFIT

This is a quick and nutritious lunch if you have leftover cooked chicken from the night before. It is high in protein for healthy muscle growth and vitamin C which will aid iron absorption from the spinach.

Ingredients

  • 40g pasta (fusilli, shells or any small shape)
  • 3 cherry tomatoes (halved)
  • 30g cooked chicken (3-4 slices, chopped)
  • 1 tbsp pesto
  • Handful spinach leaves
  • Parmesan cheese (optional)

Directions

  1. Cook the pasta in a saucepan of boiling water until soft
  2. Drain the water and then return the pasta to the saucepan
  3. Mix in the rest of the ingredients and continue cooking for another 4-5 minutes
  4. Serve warm.
