Baked sweet potato with tuna

Ingredients

  • 1 sweet potato (small)
  • ½ tin tuna (in spring water, drained)
  • Cheddar cheese (grated, optional)

Directions

  1. Wash the sweet potato well and prick all over with a fork.
  2. Cook on high in the microwave for about 20 minutes or until tender.
  3. Split the sweet potato in half and place on a serving plate. Mash the flesh lightly or cut into little cubes so that it comes apart easily for little hands.
  4. Flake the tuna with a fork and add on top of the potato.
  5. Sprinkle with cheddar cheese (optional)
