Little Spanish Omelette

BENEFIT

Ingredients

  • 1 potato (washed, peeled and sliced)
  • 3 eggs
  • ½ onion
  • 40g cheddar cheese (grated)
  • 1 tsp olive oil (or rapeseed)
  • 6 button mushrooms (sliced)
  • 6 cherry tomatoes (halved, to serve)

Directions

  1. Put the potato slices in a saucepan of water, bring to the boil then simmer for 10-15mins or until tender then drain.
  2. Beat the eggs and add in the mushrooms, and the cheese
  3. In a frying pan, heat the oil on a medium heat, add the onion and sauté for about 5 mins until softened
  4. Add the potato slices and  fry for a further 2 mins
  5. Pour the egg mixture into the pan and cook on a low heat till the eggs start to set on the side
  6. Preheat the grill and once the mixture is nearly set remove from heat and place the pan under the grill for about 5 mins until golden on top.
  7. Chop into bite sized pieces and serve with some chopped cherry tomatoes.
