Shepherd's Pie

BENEFIT

This recipe is a source of iron which is very important during the toddler years for their rapidly growing brain. It is also high in Beta-Carotene which is important for healthy vision and supports a healthy immune system.

Ingredients

  • 500g lean mince meat
  • 1 onion (chopped)
  • 4 carrots (diced)
  • 2 cloves garlic (crushed)
  • 200ml low salt beef stock
  • 400g tin tomatoes
  • 1 tbsp tomato puree
  • 1 tsp mixed herbs
  • 8 potatoes (medium)
  • 30ml growing up milk

Directions

  1. Preheat the oven to 180C.
  2. Heat a tablespoon of oil in a large saucepan and add the meat once hot. Heat gently, until the meat browns.
  3. Add the onions, carrots and garlic and continue to cook for 10 minutes. Stir in the stock , tomatoes and tomato puree, and bring to the boil.
  4. Add the herbs, cover the saucepan and simmer gently for 15 minutes.
  5. Meanwhile, cook the potatoes in boiling water until tender, then drain and mash with the milk.
  6. Pour the meat and veg mixture into an ovenproof dish. Top with the mashed potato and smooth over.
  7. Cook in the oven for about 20-30 minutes until the potatoes are golden brown.

TIP

To add some extra calcium serve with some melted grated cheese on top. You could also add in some frozen veg like sweetcorn or peas to give an extra veggie boost.
