Quick Quesadilla

BENEFIT

This quick quesadilla is high in calcium and protein for healthy bones and B12 which supports a healthy immune system and helps to reduce tiredness.

Ingredients

  • 1 tsp pesto
  • 1 flour tortilla (small)
  • 30g cooked chicken
  • 15g mozzarella (grated)
  • ½ tsp olive oil

Directions

  1. In a medium frying pan, spread the oil and heat for a few minutes.
  2. Place the tortilla wrap in the pan.
  3. Spread the pesto on one half of the tortilla and then add the chicken and mozzarella on top of this half.
  4. Fold the other half of the tortilla over on top of the mixture.
  5. Once folded, press down on top with a spatula and cook for 2-3 minutes or until slightly browned – watch carefully so that it doesn’t become too crispy.
  6. Flip the tortilla and cook on the other side for 2-3 minutes.  Once browned, remove from the heat and let cool slightly before cutting in small bits for your toddler to pick up.

TIP

Rather than pesto you could also use some tomato puree. Serve with some soft cooked carrot sticks or some peas.
