Mini Sweetcorn Fritattas

BENEFIT

Vitamin C is important for a healthy immune system and for healthy bones and teeth. Eggs are a good source of iron, vitamin D and protein.

Ingredients

  • 250g sweetcorn (tinned or frozen)
  • 1 bunch fresh coriander (or 1/2 tsp coriander powder)
  • ½ red pepper (finely chopped)
  • 2 spring onions (finely chopped or 1 small onion, chopped)
  • 2 eggs
  • 1 tbsp flour
  • Black pepper (to season)

Directions

  1. Place half of the sweetcorn into a food processor with the eggs and black pepper and blend until a batter is formed.
  2. Place the batter into a mixing bowl and fold in the rest of the sweetcorn, coriander, red pepper, spring onion and flour.
  3. Line a muffin tray with paper cases and spoon the mixture into the cases. Bake for 15-20 minutes at 180oC.

(One toddler portion is equal to 2 small individual fritattas)

TIP

This recipe is not suitable for freezing so discard any leftovers. Substitute the sweetcorn with frozen peas for variety.
