Sweet Potato Pancakes

BENEFIT

These pancakes are a source of protein which is important for growth and repair of cells. This is also a great way to sneak some extra veggies in to the day!

Ingredients

  • 230g sweet potato (peeled and cubed)
  • 230ml growing up milk (or toddler's usual milk)
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 egg
  • 100g whole-wheat flour
  • 1 tsp baking powder
  • 1 tbsp rapeseed oil (or olive oil)

Directions

  1. Boil the sweet potato until soft in a saucepan of water, once soft drain and allow to cool slightly.
  2. Mash the potato until smooth.
  3. Mix the wet ingredients in a bowl until smooth.
  4. Add the wet ingredient batter to the dry ingredients. You can add more milk if you need to for the consistency of pancake batter.
  5. Pour some oil into a hot pan and ladle portions of batter into the pan
  6. Flip pancake when it begins to bubble.

If you have leftover batter, pour into bun cases and bake in the oven for 15 mins 160C for a healthy snack during the day
