Mini Pancake Bites

BENEFIT

Your toddler is sure to love these mini pancakes and you can be assured they are getting a healthy breakfast which is high in protein and a source of calcium and phosphorous for healthy bones and teeth.

Ingredients

  • 1 egg
  • 1 tbsp wholemeal flour
  • 125g yogurt (plain or fruit)
  • ½ tsp rapeseed oil (or other flavourless oil)
  • Handful blueberries

Directions

  1. Whisk together the egg, flour and a tablespoon of the natural yoghurt in a bowl.
  2. Heat the oil in a frying pan over a medium heat.
  3. When heated, add small amounts of the batter to the pan (about 1.5 tsps per pancake bite).
  4. Cook for a couple of minutes until starting to set and then flip and cook the other side.
  5. Remove from the pan and serve with the remaining yoghurt and add blueberries on top.

TIP
