Salmon Potato Cakes

BENEFIT

Salmon is a great source of Omega-3 which is essential for baby’s brain and eye development. It is also high in Vitamin D which is essential for calcium absorption for baby's developing bones.

Ingredients

  • 200g potatoes (approx. 2 medium potatoes)
  • 2 fresh salmon fillets (small, 200g)
  • 1 tbsp parsley (chopped)
  • ½ tsp dried dill
  • 1 spring onion (chopped)
  • 1 tbsp lemon juice
  • 60g bread crumbs
  • 2 tsp olive oil

Directions

  1. Preheat oven to 190°C
  2. Place salmon fillets on a baking tray and bake for 15 minutes.
  3. Meanwhile cook the potatoes in boiling water for 10-12 minutes or until soft.
  4. Remove from heat, drain and mash.
  5. Remove the salmon from the oven and break down into flakes with a fork.
  6. Add the spring onion, parsley, dill, lemon juice, half the breadcrumbs and flakes of salmon into the mashed potato and mix.
  7. Shape the mixture into 4 patties and coat in the remaining breadcrumbs.
  8. Heat the oil in a large frying pan and cook patties for 4-5 minutes on each side or until golden.
  9. Remove from heat and sere with a side salad.

This is a great way to get a portion of your oily fish into the diet. Even if you are not a fish lover, there are plenty of other flavours in this dish. You can also substitute the salmon for different fish options and to save time you can poach the salmon.
