BENEFIT

This recipe is high in Calcium for development of baby’s bones. It is also a great source of iron for brain development and high in vitamin C which helps to release iron from food.

Ingredients

  • 4 flour tortillas
  • 25g low fat cheddar cheese (grated)
  • 1 spring onion (chopped)
  • 1 red chilli (de-seeded and sliced)
  • 3 tomatoes (ripe)
  • 1 clove garlic (crushed)
  • ½ onion (small)
  • 1 red pepper
  • 5 tsp lemon juice (about half a lemon)

Directions

  1. To make the salsa, chop the tomatoes, onion and pepper into small chunks.
  2. Mix these ingredients in a bowl with the crushed garlic and lemon juice. Set aside for serving.
  3. Gently heat a frying pan and place a tortilla on top.
  4. Sprinkle half the cheese, half the spring onion and half the chilli slices onto the middle of the tortilla.
  5. Cover with another tortilla.
  6. When the tortilla on the bottom is getting brown, carefully turn over to cook the other tortilla.
  7. When it is nice and brown and the cheese is melted, remove from heat.
  8. Do the same with the other tortillas and remaining ingredients.
  9. Cut Quesadillas into wedges and serve with the prepared salsa.

TIP

This recipe makes for a more interesting lunch option than a standard toasted sandwich. Add in different coloured peppers, rocket, more onion or whatever appeals to your taste.
