Baked Potato with tuna and cheese

BENEFIT

This recipe is high in protein for growth and repair of cells. Adding cheese makes this recipe a great source of calcium and it is high in vitamin D to help absorb this.

Ingredients

  • 2 whole potatoes (medium sized)
  • 1 tsp vegetable oil
  • 40g mild low fat cheddar cheese
  • 100g tuna

Directions

  1. Preheat the oven to 190°C.
  2. Wash and dry the potatoes.
  3. Pierce with a fork in two places.
  4. Brush with oil.
  5. Wrap in tin foil, place on a baking tray in the oven and cook for 50-60 minutes until soft.

Slice across the top and serve with tuna and cheese.

Microwave:

Alternatively you can bake the potato in the microwave to save some time.

  1. Follow steps 1, 2, 3 and 4 above.
  2. Then place the potatoes on a plate and heat in the microwave on full for 10 minutes, turning halfway through. This timing may vary depending on your microwave so do monitor and remove once soft and fluffy.
