Avocado and rocket pasta salad

Ingredients

  • 200g dried pasta (shells, penne or spiral)
  • 1 tbsp parmesan cheese (finely grated)
  • 1 avocado (small)
  • 1 tbsp pine nuts
  • 30g baby rocket
  • 2 tbsp pesto

Directions

  1. Bring a saucepan of water to the boil and add in the pasta.
  2. Cook until soft and drain.
  3. Add in the chopped avocado, rocket and stir through the pesto and pine nuts.
