Cajun Chicken Caesar Salad

BENEFIT

This is high in calcium for baby’s bone health and a great source of folate which is essential during the pre-conception period and for the first 12 weeks of pregnancy to prevent neural tube defects.

Ingredients

  • 1 tbsp parmesan cheese (grated)
  • 1 tbsp fresh lemon juice
  • 3 cloves garlic (crushed)
  • 1 tbsp olive oil
  • 2 tbsp low fat plain yogurt
  • 2 tbsp light mayonnaise
  • 5g black pepper (ground)
  • 2 chicken breasts (boneless and skinless)
  • ½ tbsp parmesan cheese (low fat, grated)
  • 2 tbsp cajun spice
  • ½ head romaine lettuce

Directions

  1. Preheat the grill on a medium to high heat.
  2. Make deep slashes in the chicken fillets.
  3. Rub the Cajun spices all over into each fillet.
  4. Grill the chicken for 8 mins on one side, flip and grill for another 8 mins or until cooked through.
  5. Meanwhile prepare the dressing by mixing together the tbsp of parmesan, lemon juice, garlic, olive oil, yogurt, mayonanaise and black pepper in a bowl with a whisk, until smooth.
  6. When the chicken is cooked, cut it in strips.
  7. Divide the lettuce and chicken between two bowls, sprinkle with the half tbsp of parmesan and pour dressing over to taste.
