Warm Winter Fruit Pots

BENEFIT

Fruit is full of Vitamin C which boosts your immune system and helps iron absorption. It also contains folate which is essential during the pre-conception period and for the first 12 weeks of pregnancy.

Ingredients

  • 1 banana (halved)
  • 1 peach (chopped in wedges )
  • 2 mandarin oranges (small, in segments )
  • 1 plum (chopped in wedges )
  • 1 apple (peeled and chopped)
  • 4 strawberries (halved)
  • 1 tbsp lemon juice
  • 1 tbsp orange juice

Directions

To make in the oven
  1. Preheat the oven to 180°C (160°C for fan oven).
  2. Keep half of one of the oranges aside for juice.
  3. Place all the fruit on a sheet of tinfoil, squeeze the lemon and orange juice over the fruit and wrap loosely.
  4. Bake in the oven for 10 minutes.
  5. Serve immediately.
To make in the microwave
  1. Place all the fruit in a microwaveable dish keeping a few orange segments aside for juice.
  2. Squeeze the orange and lemon juice over the fruit.
  3. Heat on medium heat for 4 minutes.
  4. Leave to stand for a minute.
  5. Serve immediately.

TIP

This is a different way to get in some of your 5 a day. You can change the recipe to add in your favourite fruits or whatever is in season. You can serve topped with yogurt or if you’re looking for a healthy dessert idea this would be great served with ice-cream or custard.
