BENEFIT

Lean meat is a great source of iron for baby’s brain development and protein for growth of their cells. The tomatoes add a source of Vitamin C which helps absorb iron.

Ingredients

  • 2 turkey rashers (lean)
  • 1 tomato (ripe)
  • 1 egg (to be poached)
  • 5 button mushrooms
  • 2 slices wholegrain toast

Directions

  1. Preheat the grill on medium heat.
  2. Halve the tomato lengthways.
  3. Place the tomato and mushrooms in the grill and cook for 5-8 minutes.
  4. Fill a saucepan with boiling water from the kettle, bring it to a light simmer on medium heat.
  5. Add the rashers to the grill. Cook for a further 4 – 5 minutes until meat is thoroughly cooked.
  6. Crack your egg into a cup and gently pour it into the simmering water, leave in until cooked to desired consistency (2-4 minutes).
  7. Serve with wholegrain toast and enjoy!

TIP

There’s nothing wrong with having an occasional cooked breakfast. Just make it a healthier version. Grilling is much healthier than frying, and the poached egg can be replaced with boiled or scrambled if you prefer.
