In a bowl, combine the couscous, oil and lemon juice.
Pour 50ml of boiling water over the couscous mixture and leave to soak for about 5 minutes.
Separate the grains with a fork.
Meanwhile, in a saucepan, add the carrots to boiling water, cook for about 4-5mins and then add the peas.
Cook for a further 3-4 minutes until the vegetables are tender.
Drain and allow to cool.
Stir the avocado through the couscous and then mix with the veg.
This makes a quick and nutritious meal for baby when you don’t have much time. Carrots contain beta-carotene which supports healthy vision and avocados are rich in healthy fats. Use the leftover avocado to mash with banana or kiwi and freeze this to keep for a quick snack for baby another day.
