Tasty Salmon Fishcakes

  • 2 potatoes
  • 1 fresh salmon fillet (100g)
  • 1 tbsp parsley (chopped)
  • 2 tsp lemon juice
  • 30g bread crumbs
  • 1 tbsp olive oil


  1. Preheat oven to 190°C
  2. Place salmon fillet on a baking tray and bake for 15 minutes.
  3. Meanwhile cook the potatoes in boiling water for 10-15 minutes or until soft.
  4. Remove from heat, drain and mash.
  5. Remove the salmon from the oven and break down into flakes with a fork being very careful to remove any bones.
  6. Add the parsley lemon juice, half the breadcrumbs and flakes of salmon into the mashed potato and mix.
  7. Shape the mixture into 4 small patties and coat in the remaining breadcrumbs.
  8. Heat the oil in a large frying pan and cook patties for 4-5 minutes on each side or until golden.
  9. Remove from heat, allow to cool and mash/chop/blend to desired consistency.

Oily fish is a great source of Omega-3 fatty acids so try to include it in your baby’s diet 1-2 times per week. These are great for finger food stage, just cut into little pieces.
